Easy Sunday Cooking

Love letting my crockpot work for me while I'm at church... coming home to the smell of food and a meal mostly ready is a peaceful feeling.  It helps too that an afternoon of football or golf is usually on the agenda and both are perfect for putting me right to sleep!

This recipe was one I remember making when we first got married and has been with us ever since.  It's from the Fix It & Forget It cookbook.

Creamy Chicken:
Stir together in crockpot:
Can of cream of mushroom
16 oz Sour Cream
1 packet of french onion soup mix
Then press 4 chicken breast down into the mixture.

My crockpot is super fast and hot and I usually only cook this for 4 hours on low and it is perfectly tender. I either serve it over rice, or dice up some potatoes w/ onions, put on baking sheet w/ 2 tbsp olive oil well mixed, add salt and bake at 400 for 25-30 minutes.  Stirring around a couple times to keep from sticking.  I actually love it best w/ the rice. If potatoes, I like making them up before we leave and then you can just heat them a bit when you get home and wallah, lunch is ready in no time... which works best cuz we are usually hungry right when we get home.

The other easy is Turkey Chili:
Brown 1# ground turkey w/ 1/2 an onion
Add this in a crockpot w/:
2 cans black beans
2 cans chili beans
2 cans corn
Taco Seasoning

I cook this on high for the first hour then low for 3-4. Really good served w/ some broken tortilla chips on top and cheese or sour cream.

Try these easy p.b. cookies for something sweet: (Found this recipe online somewhere while looking for gluten-free recipes and apparently this is one... guess sugar is gluten free!! these are like sugar cookies as much as they are p.b. ones!)

Using an electric mixer, mix 1 cup peanut butter w/ 1 cup of sugar
Add in a beaten egg and 1 tsp baking soda
Place 1 tbsp size balls of the mixture on a greased baking sheet
Score w/ a fork
Cook 10 min at 350
